LET'S MAKE SOMETHING GOOD

One step at a time.

  1. Soften the onion

Heat oil over medium heat. Add onion and cook for about 7 minutes, stirring, until softened.

    WHAT TO LOOK FOR

Lower the heat if the edges darken before the middle softens.

  2. Warm the spices

Add garlic and curry powder and stir for about 30 seconds. Add tomatoes promptly.

    WHAT TO LOOK FOR

Do not leave the dry spices on the hot base until they scorch.

  3. Simmer the chickpeas

Add chickpeas and coconut milk. Bring to a gentle simmer, then cook uncovered for about 12 to 15 minutes. Add the measured water in small splashes if needed.

    WHAT TO LOOK FOR

The sauce should remain spoonable. Canned chickpeas are already cooked; dried chickpeas are not a direct swap.

  4. Wilt the spinach

Stir in spinach a handful at a time and cook for about 2 to 3 minutes until wilted and hot throughout.

    WHAT TO LOOK FOR

Fold larger leaves through so they do not sit as one clump.

  5. Season and portion

Taste and add salt as needed. Divide between four bowls. Rice or bread can make a fuller meal but is not included in the ingredients or timing.

    WHAT TO LOOK FOR

Curry powder strength varies; begin with a mild blend rather than adding extra heat blindly.

A LITTLE HELP ALONG THE WAY

Small details that matter.

01

Read the coconut label.

Sweetened coconut drinks and coconut cream are different products from canned coconut milk.

02

Use the same greens.

This timing is for baby spinach. Tougher greens need a different cooking time.
